Jose’s Heavenly Tacos

WARNING: These tacos aren’t exactly a “healthy” choice. But screw it, everyone needs a delicious, artery-clogging dinner once in a while, right?
Obviously if you’ve seen pictures, you would’ve noticed that my boyfriend is indeed Mexican. This is the only reason why I’m still with him today: his tacos. (And various other traditional Mexican dishes!) Just don’t tell him that.

What You Need:

  • Corn or Flour Tortillas (we use corn)
  • 2 Boneless, Skinless Chicken Breasts
  • 2 tbsp Corn Oil
  • 1 Avacado, sliced
  • Chihuahua Cheese, grated
  • Homemade Salsa, or any kind you like

Get Cookin’:
Set the oven to 350 degrees F. Season chicken as desired, I normally use seasoning salt, salt, and pepper. Bake the chicken until cooked – about 30 minutes. Once chicken has cooled enough, tear until shreds and place onto a heated skillet with the corn oil, low-medium heat will do. Sprinkle the chicken with more seasoning if desired.


Place tortillas in another pan to heat until warm, you may heat with small amount of oil if you wish to have greasy tacos (which we love!). Once tortilla is heated, build your tacos with the shredded chicken, avacado, cheese, and salsa.

These tacos are simple but they taste great. The homemade salsa really sets them apart in my opinion. Happy eating!

    Chihuahua cheese is made from the little furballs themselves…just kidding! It's a Mexican cheese you can find at the grocery store, it's normally in wheel form. It's really good!

    Once in awhile! Are you kidding? I've been eating on creamy green chile chicken enchiladas all week– they are loaded with butter, cream cheese and whipping cream– not healthy but yummy.

    this recipe sounds delicious and way more healthy— I love avocados–I'm going to make these!

    When the chicken is cooked and cooled enough to touch, I just rip it with forks or with my fingers into little shreds – chicken shreds easily.

    And yes, there are a few reasons I'm with my boyfriend. I was kidding πŸ˜‰
