Pumpkin Bread French Toast

What’s better than waking up on a Sunday morning than indulging in a breakfast designed to keep you satisfied until dinnertime? Not a damn thing. (just my humble opinion!)

One of my favorite breakfast resturants of all time serves great banana bread french toast. I saw it on the menu a few years ago and thought it was pure genius. I love French toast, almost as much as I love a good slice of banana bread. Luckily for me, I made some pumpkin bread yesterday and decided to spend my Sunday morning stuffing my face full of none other than Pumpkin Bread French Toast.

What You Need:

  • 8 Slices of Day Old Pumpkin Bread, cut into ½-inch thick slices (or banana!)
  • 4 large eggs
  • 2 tablespoons sugar
  • 1 cup milk
  • ½ teaspoon vanilla extract
  • 4 tablespoons unsalted butter
  • 4 tablespoons vegetable oil

Get Cookin’:
Whisk together the eggs and sugar in a large baking dish. Add the milk and vanilla and mix until combined. Heat 2 tablespoons of the butter and 2 tablespoons of the oil in a large nonstick pan over medium-high heat. You could also use a griddle. Dip the pumpkin bread into the egg mixture and soak both sides until thoroughly coated. Place bread slices onto the pan and cook on both sides until golden brown, about 2 minutes per side. Remove to a plate and repeat with the remaining butter, oil, and bread. Enjoy!
