Stuffed Green Peppers

I thought I’d share my first *healthy* recipe with everyone.

Stuffed Green Peppers

Ingredients:
2 Green Peppers
1lb Ground Beef or Turkey
1 McCormicks Taco Seasoning Packet
1 Boil In Bag Whole Wheat Rice
1 Onion
1 8oz Can Tomato Sauce
2 Slices (Light) Mozzerella or Provolone Cheese

Preheat oven to 400 degrees. Cook ground beef or turkey until browned, drain fat and add 3/4 cup water and the Taco Seasoning. While cooking the meat, boil the rice or cook rice as directed on package. Dice up an onion as desired.

Wash green peppers and slice tops up, seed them. You may boil the green peppers until they turn a slightly darker shade of green and become softer, I myself do not. Mix equal parts of tomato sauce and rice – just enough to lightly coat the rice.

Now build your pepper in a baking dish. Spoon desired amount of rice/tomato sauce mixture into bottom. Next, layer on the meat and onion, top off with small amount tomato sauce. Place in oven and bake for 40 minutes. Place slice of cheese on top and bake for 5 minutes or until melted and bubbly.

In other boring news, I tried beers #9 Leinenkugels Honey Weiss which I really liked. Can’t say I tasted the honey, but I’m not that great at picking up on “notes” or “undernotes” or whatever. And #10 was Leinenkugels Classic Amber. Too macho and dark-tasting for me, but not bad at all. Thank goodness for the Autumn Sampler Pack that was calling my name at the grocery store.
